These 5 Instant Pot Dinners Will Have You Saying 'I Love RVing!'

There are many things to consider when roadsteading in an RV. One of the most important things is what you will cook and eat. Here are my 5 go-to Instant Pot dinners for making in the RV while roadsteading.

Instant Pot Meaty Spaghetti

When it comes to weeknight dinners, this Instant Pot Meaty Spaghetti is a staple in my house. We at least have it once a week, and it's always a hit with the family. You can either use your own pasta sauce or store bought, but I always like to add in some extra spices to give it a little something extra.

When I make this dish I prefer to use shaped pasta like rotini or penne as it seems to cook better in the instant pot. All you need is 16oz of pasta, 2 cups of pasta sauce, 2 cups of water and of course, you can't forget the meat! I usually use sausage, but sometimes I'll mix it up and use chicken. 

Once you have added this all to the instant pot, you will just need to cook it for 4 minutes on high pressure then do a quick release, stir, and you are ready to serve.

Healthy Curry Laska Ramen

Curry Laska Ramen is a popular Malaysian dish and is my favorite comfort food because it is hearty and filling, but also healthy and wholesome. It is best served with ramen noodles, but you can use what you have on hand.

Over the years, I have developed my own ramen broth recipe, but this isn't the traditional way of making this dish. I add one carrot, an onion chopped in half, 5 garlic cloves, a large piece of ginger, a couple coriander seeds, 1 star anise, and chicken broth, be sure to leave some space from the max fill line. You can also optionally add a teaspoon of Korean pepper flakes also known as gochujaru. I like to slow cook it overnight when I can, but you can pressure-cook it for 30 minutes to 1 hour if you are pressed for time.

Instant Pot Meat Loaf

Instant Pot Meat Loaf has become a new family favorite here, it is juicy, tender and oh so tasty. This dish is so simple to make and only takes a few minutes to cook.

I love that I can make this ahead of time and then just pop it in the Instant Pot when I'm ready to eat. The meat loaf comes out perfectly cooked every time and my family loves it! The only thing I do differently than the recipe is use ground turkey instead of beef and change the seasonings occasionally.

This is great served with fluffy buttery mashed potatoes, green beans, but we also love adding homemade bread baked in our machine bread to make tasty meat loaf sandwiches.

Easy Curry Stew

This easy curry stew is perfect for a weeknight dinner. Made with simple ingredients, it comes together quickly in the Instant Pot. Depending on what veggies that I have on hand, I cook it on high pressure for 15-20 minutes.

I like to add chicken, chickpeas, onion, carrots, zucchini and, a couple peeled chopped potatoes along with coconut milk and curry paste to taste into the Instant Pot. If I am feeling extra fancy, I will add some pineapple to give it a tropical twist.

This hearty stew is packed with flavor. Curried chicken and vegetables are simmered in a rich coconut milk broth. Serve over rice or quinoa for a complete meal.

When it comes to tamales, there's nothing quite like the real thing. But let's face it, making tamales from scratch is a lot of work. That's where Instant Pot Tamale Pie comes in. This dish is perfect for those times when you're craving tamales but don't have the time or space to make them the traditional way.

Instant Pot Tamale Pie is made with the tasty masa dough that makes tamales so tasty. It can be made with a variety of fillings depending on what you have on hand. My personal favorite is a combination of beans, pork, leftover veggies and rice, but you can fill it with your favorite filling of choice.
